Beverly Hills Chicken Salad

A yummy treat for a hot summer's day!
Beverly Hills Chicken Salad

2 lb Cooked Chicken, cooled and diced into ½ inch cubes
½ tsp. Salt
Fresh Ground Pepper to taste
3 Tbsp. Fine Chopped Onion
6 Tbsp. finely chopped Celery
3 Tbsp. Capers (washed and lightly dried) finely
Chopped
½ Pt. mayonnaise
½ Pt. Sour Crème
1 Tbsp. Finely Chopped parsley

Mix/toss all ingredients in a large bowl – serve over lettuce greens or on Brioche Rolls.

Makes 4-6 servings.

Simple Summer Sangria! Multo Refrescante!

Start with a basic Red Wine of choice.  We have tried a good domestic Cabernet with terrific results.  In an footed ice tea glass or balloon wine glass fill with ice, pour 1/2 glass of red wine, then fill the remainder of the glass with fresh squeezed orange juice.  Add the juice of half a lime and garnish with fruit.  Stir.  This simple version is most refreshing and adds the right amount of dry and sweet together with a wonderful citrus chill.  Enjoyable for the rest of the Summer months!

My new blog-spot is a bit of a stretch for me... after becoming disenchanted with Facebook...
